Ingredients:

  • 1 medium butternut squash, peeled & cubed (~6 cups)

  • 1 onion, diced

  • 3 carrots, chopped

  • 3 garlic cloves, minced

  • 4 cups chicken or veggie broth

  • 1 tsp thyme

  • ½ tsp nutmeg

  • ½ cup heavy cream (or coconut milk)

  • Salt & pepper

Instructions:

  1. Add squash, onion, carrots, garlic, broth, thyme, nutmeg, salt, and pepper to crockpot.

  2. Cook on LOW 6–7 hrs or HIGH 3–4 hrs.

  3. Blend until smooth with an immersion blender. Stir in cream.

  4. Garnish with pumpkin seeds or a swirl of cream.
