Ingredients:

  • 1 cup uncooked wild rice (rinsed)

  • 1 lb chicken breasts

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 onion, diced

  • 6 cups chicken broth

  • 2 tsp thyme

  • 1 tsp sage

  • ½ cup cream (or coconut milk)

Instructions:

  1. Add rice, chicken, veggies, broth, thyme, sage, salt + pepper to crockpot.

  2. Cook on LOW 7–8 hrs or HIGH 4–5 hrs.

  3. Remove chicken, shred, return to pot. Stir in cream before serving.
