Creamy Crockpot Chicken Pot Pie Soup

All the cozy flavors of chicken pot pie in a bowl. This chicken pot pie soup is creamy, hearty, and made in the slow cooker so dinner practically makes itself. Tender chicken, potatoes, peas, and veggies in a rich broth, topped with biscuits or pie crust dippers. Perfect for fall nights when you want comfort without the work.

 

Ingredients

  • 1 lb chicken breasts, diced

  • 4 cups chicken broth

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 onion, chopped

  • 2 Yukon gold potatoes, cubed

  • 1 can cream of chicken soup

  • 1 cup frozen peas

  • 1 tsp thyme

  • Biscuits or pie crust (for topping)

Instructions

  1. Add chicken, broth, carrots, celery, onion, potatoes, soup, and thyme to crockpot. Cook on LOW 6 hrs.

  2. Stir in peas, cook 20 min more.

  3. Serve topped with baked biscuits or pie crust dippers.
